Here’s something a bit different for many people, but if it’s not unusual for you, then you know it’s tasty! First, cook the cornmeal. Please use whole grain cornmeal. If you are fortunate to have your own grain mill, you can use popcorn. I buy popcorn in big bags from Gordon Foods. Anyway, back to cooking the cornmeal. For each part cornmeal, you will use 4 parts water. For my batch, I used 1/2 cup of cornmeal and 2 cups of water. First I put 3 parts water on the stove to boil. (1 1/2 cups). I mixed the 1 part cornmeal (1/2 cup) with 1 part cold water (1/2 cup) and stirred that together. For each cup of cornmeal you use, stir 1 teas salt into the water. So I used 1/2 teas. When the water boils, add the cornmeal/water mix and cook until thick, stirring frequently. When the mixture is thick, pour it into a loaf pan or other container. I poured mine into two small drinking glasses. Then I set it in the fridge to chill overnight. In the morning I removed the molded cornmeal from the glasses and sliced it, then fried it. I can’t believe it took me so many words to convey something so simple. I’m sure you could have done a better job!
